Tuna Salad with Veggies
This simply simple favorite gets down to Earth with the addition of some veggies which add even more healthful nutrients which help to boost energy levels and mood. Serve as a snack or a meal.
Ingredients:
1 6oz can chunk light tuna in water
2 heaping tbs. mayonnaise*
1 tbs. chopped celery
1 tbs. diced red bell pepper
1 tbs. diced carrot
1 tbs. raisins (optional)
1 tsp. chopped scallion or red onion
salt and pepper to taste
* Simply Simple recommends using, no fat, light or olive oil based mayonnaise
Preparation:
Mix all ingredients together until well combined.
To eat as a meal- serve on your favorite hearty whole grain bread, wrap or pita. Garnish with lettuce and tomato if desired.
To eat as a snack- place a dollop on your favorite whole grain cracker, place down the center of a stalk of celery or simply use as a dip.
